ROASTED PEAR "WASSAIL"

A traditional wassail always gets us in the holiday spirit, but the use of roasted pears and brandy send this classic over the top.

ROASTED PEAR WASSAIL

For the Pears: 

1/2 cup brandy
2 tablespoon brown sugar
8 small pears

Preheat oven to 400 F degrees. Cut the pears in half and roast for 30 minutes. Puree pears in blender or food processor, reserving several slices for garnish if you desire. 

For the wassail mixture: 

1 cup water
1 cup bourbon
1/2 cup brandy
2 cinnamon sticks
2 vanilla beans
1/2 cup brown sugar
1/4 teaspoon nutmeg

Heat all ingredients (including the pear puree) on low for approximately 30 minutes, or until sugar is dissolved and drink is fragrant.
